Alisha's Ginger, Garlic, Noodle Soup with Bok Choy

Sometimes when Pintrest meets real life the result is a mixed bag. I found a recipe on Pintrest for a “Ginger Garlic, Noodle Soup with Bok Choy”, it even had a video. The problem with this recipe is that the recipe itself left things off from the video and it didn’t have written out directions which made it difficult to follow. It’s one of those recipes it will start as their’s and become yours. This is my attempt to simplify the recipe, make it easier for you to make and easier for me to make the next time I do it again (and that will probably be soon!).

Feeds 4-6
1.25-1.5 hours to make (unless you’re a wiz in the kitchen).

You’ll need a big soup pot to make this

2 Tbsp olive oil
4 Large shallots diced
8 cloves garlic minced or diced
4 table spoons fresh ginger diced
15oz crimini mushrooms sliced
2 Bunches green onions (You’ll use the whole onion the green and the white parts
2 heads of Bok Choy
11 cups vegtable broth
5 cups water
4 tbsp soy sauce
4-5 packages rice noodles (think 4 that are the size of a ramen package)
1 tbsp red pepper flakes
1 tbsp sesame seeds
4 star anise whole
chopped cilantro to taste as a finishing

Cover the bottom of the pot with your olive oil, once hot add shallots sauté until tender. Then add the white part of the green onions and then add garlic and fresh ginger mix and sauté on medium heat. Now add vegetable broth and water. Add star anise and soy sauce, stir together cover and bring to a boil and then boil for about another 5 minutes. Remove the star anise. Add 1 head of chopped Bok Choy chopped and the ramen noodles. Then add the mushrooms. Stir together, bring back to a boil and continue to cook for about 4 minutes until the ramen is done. Then turn the heat off and add the additional Bok Choy leaves whole, mix them in, then add the chopped cilantro (optional), the chopped green tops of the green onion, the chill flakes, and sprinkle with sesame seeds.
